Wow I love the quote and love the images. The first image was really shocking, really aesthetically arresting. And I love the simplicity of the idea it really works for Brakhage. What I might suggest, because he was largely impacted by these works, is to look at various imagist poems. These deal, on a hugely general level, combining two disseparate and almost unrelated images to create a specific image of something. Specificity is HUGE with the Imagists (mostly Ezra Pound and his pupil H.D.). If you look at some of these poems maybe it will give you some more inspiration if you need it.
If it's going to be interactive maybe have some sort of way that people could document their reaction to each filter? Also, since you want to do it as an installation and have the user involved, maybe they can make their own food mirror image and play with the filters on their own that they created. Maybe they'll find that the image they create is supposed to be happy, but when they put a red filter on it, it invokes a sense of anger.
The mirror image choice is so interesting because it also has other connotations - like Rorschach and the psychology there. There might be a way to integrate that too if that's of any interest.
sorry this is so late! very cool idea—my only comment/suggestion would be to maybe make some images using cooler colors as well? the impact of all of these images in a row leaves me with a sort of blood/organic materials vibe instead of just celebrating the colors/color interactions...maybe with a little more distribution across other non-red colors it might mitigate that sensation? unless that's what you wanted, like along the vein of making it more arresting. :o)

I like the idea of the audience creating their own food images if that would be feasible. The patterns you made are so beautiful!
